What reply would you suggest to 2. Qh5 in order to stop this?  2. ... Nf6  and if white still plays 3. Qxe5+, then offer a queen exchange with 3. ... Qe7?

best reply to Qh5 would be d6 or Nc6

Only a small gimmicky trick by white. 1. e4 e4 2. Qh5?! is just very bad. An idiot, sadly, would actually hang material.

Even 1.e4 e5 2.Qh5 Nf6 2.Qxe5+ Be7 is not to my liking: Black will win a lot of tempos for just a measly pawn. Early excursion of her majesty can be harmful for her health.

Nakamura would probably disagree, but his analogous Sicilian experiment was a disaster: 1.e4 c5 2.Qh5? Nf6! (as played by Volokitin) and white is already worse.
