If by "bot" you mean an online engine, your options are limited. But if you download an engine and a GUI to your computer then you can do it in different ways. Put "Practice your opening against an engine" into a search engine like duckduckgo and there are some articles on how to do it, including one here at chess.com.

Can I get bots to play a certain way so I can study particular strategies? Nelson Lopez has a great video about how to counter the Fried Liver with the Traxler, and I'd like to practice against bots. But I I don't know how to "force" them to play that.
