Good Caro kann counter
I used to play the Caro, the simplest is the Exchange in my opinion.. 1. e4 c6 2. d4 d5 3. exd5 cxd5 4. Bd3, c3 next move, then play normal developing moves, and your middlegame plan is a piece attack against White's king. Toldsted's suggestion is fine too but the position can become quite different depending on what Black does next. The Exchange you will get the same thing every time.
I agree with those advocating playing natural moves, when facing the Caro. When 1. e4 is answered by 1... c6, my next move is, naturally, Ke2. Because the Caro often causes white to go berserk, my king naturally goes insane with anger and charges out onto the f-file headed for f7-- a known weak point in black's defenses.
