The grunfeld is a huge theory infested opening. Even one or two ways to play it might be too much work for a 2000 rated player. Not to mention, your 1600 on chess.com.
It further doesn't help the fact that you haven't specified which colour side you want help from or what kind of variations you are looking for.
From what you've typed, you'll taking anything besides the exchange. Well in that case, go to some opening database and do research or buy a book.
watch database then... But why not reading again and understanding better the ideas in your book? If u are 1600 here, u must have missed some ideas inside.

My metor's not an expert on the grunfeld, and I get a little starstruck when trying to talk to other GM's

The usual drivel. Is he going to be using the Gruenfeld against 2300 players? No. So the Gruenfeld is perfectly fine.
I play Grunfeld exactly because it is too much theory to learn on my level. At under 1900 I know white had the same problem, and is most probably not fully prepared to play a watertight Grunfeld. Meanwhile I at least get more experience playing more and more games with this opening which gives me some advantage.

An "oldie but goodie" I presume? I went ahead and bought this based on your recommendation. I've played the Gruenfeld on and off (mostly off) but need a serious weapon against 1.d4 in engines-on correspondence on another server. Because I have played it in the past I have already have another "oldie but goodie" in my library:
