You seem to have this notion that in every chess game there's this moment when God or some comparably omnicient, omnipotent being comes in and says "Behold! We have left the opening and entered the middlegame!" If any such declaration has been made in any game I've played, I'm blissfully unaware of it.
If you want to ask a question like this, you've got to define your terms precisely. The closest I've seen is "that would still be considered an opening." But considered by whom? Many people would, at least for certain purposes, consider Berlin endgame prep to fall within opening theory, yet you seem to be disqualifying that. So if it's not what some people (again, who?) consider, then what's your standard? If you really want a more serious answer, you could pose it in terms more like "What's the furthest you're aware of that a chess game has gone following a previous game before a novelty is introduced?" I have no idea what the answer would be, but people could at least try to propose answers to that (and then challenge each other to come up with longer). Or you could ask what's the longest opening line proposed in a repertoire book (though this gets hairy since many opening books follow games to their conclusion to give a sense of the middlegame and endgame implications of an opening). Those questions would at least give people a way to start giving you something resembling an answer. But without usefully defined terms, people don't have anything useful to supply, and you're just going to be frustrated.
