Knight f3 is the most principled response. As white I follow with d5. The thing about the sicilian is that it can lead to very complicated positions. Whites advantage lays in quicker development. Don't bother learning past move 3 or 4 because at beginner level, like me, there will probably be mis steps by black precisely because it's so complicated. e4.,c4 KNf3 whatever black does, d4. This should lead to an open sicilian and try to hold on to your bishops. Remember your basic opening principles: center control, activate pieces, castle.and connect your rooks. Also I think the only reason some ppl play the sicilian dragon is because it sounds cool. I should make the french dragon...lol

Unless you want to buy lots of opening books on Alapin variation.  (Done that).  Try playing a black system from the white side.  For example a Reversed Slav, Reversed Modern, or Reversed QID (i.e. Larsen's Attack).  That way, you're "booked up," and your opponent (not you) will be left scratching his head for his next opening move.  SIMPLE.

Anti-Sicilian theory is HUGE.  Why bother with it?  If you play 1) e4, be prepared to buy a raft of opening books (and black will still be "booked up" on whatever system they throw against you).  Why bother with that situation?  Because the GMs do it?  Who cares?  Not me.

The Grand Prix Attack 1 e4 c5 2 Nc3 Nc6 3 f4 is suitable indeed and so is the closed Sicilian 1 e4 c5 2 Nc3 Nc6 3 g3.
Also the delayed Alapin merits attention 1 e4 c5 2 Nf3 d6 3 c3 Nf6 4 Be2, preparing O-O and d4 and with the tactical point that e4 is indirectly defended by Qa4+
Not to be dismissed is the Bowdler Attack 1 e4 c5 2 Nc3 Nc6 3 Bc4 e6 4 d3
The Wing Gambit 1 e4 c5 2 b4 or the delayed wing gambit 1 e4 c5 2 Nf3 d6 3 b4 are not bad either, it is like a Benkö Gambit reversed.

If you want to avoid a lot of theory Alapin and Closed 2. Nc3 are good options.  I prefer the latter.  Fianchetto the light sq Bishop and set up Pawns on g3, f4, e4, d3.  It is easy to remember, sound, and can lead to a strong K side attack (see Spassky -Geller in the 1968 Candidates.)  While it is sound the counterpoint is that it is a variation that lets Black develop logically (instead of throwing in threats as in sharp counters to the Najdorf and Dragon.)  Also keep in mind if you develop the dark square Bishop to e3 early he will be hanging.  All in all 2. Nc3 is a good way to a playable middlegame.  Good luck.
