How to choose an opening?

This question seems simple to answer, I always hear that I should choose the opening that I feel most comfortable with, but I can never decide which is the most comfortable for me, so I always change openings daily.

For white, I really like e4, but I like Ruy Lopez, Italian and Scotch equally.

Black against e4 although I have a better performance of Caro-Kan and French, but I find them both boring, so I like to play e5 and c5. But in both defenses, in most games my opponents don't play the main lines, I always find anti-Sicilian lines and strange lines with e5, like the Ruy Lopez Exchange variation and Vienna game, I feel boring playing these lines.

So, I would like to focus on an opening and a defense, but how do I decide?
(Note: I mostly play on lichess, I have +1500 games there with 1700 rating, so don't just rely on this chess.com account)

first of all, how do you find the french boring? It's advanced variation is one of the most fun positions i ever saw it chess, and for the exchange...well

If they pin your c6 knight you have to castle kingside tho, the only downside
