How to play against pirc and modern?

How can I effectively counter the Pirc Defense and Modern Defense? most of the times these openings are played against me, I lose due to premature attack. Also I am having problems playing against double fianchetto systems like hippo and cow opening. After playing natural developing move, I dont know where to progress, everything in black's position is super solid.
I usually play an early h4-h5 if they don't answer h4 with ...h5, and will sac my h1 rook for a knight on h5 if a trade happens there and then play against the ruined kingside. Also trading off black's g7 bishop and then using the weak dark squares is a good strategy. You can find plenty of games to use as examples
