Italian or Two Knights?
Two Knights, however, can look after each other; now would Italians do the same?
really ? I did not get you spammer.
The bishops are on opposite colors, they cannot look out for each other, the two knights can defend each other, if need be...
Neither. 3...Be7 is the Hungarian Defence. 3...Bc5 leads to dull positions where the Bc5 is often a target, and it is incredibly difficult to play for a win. 3...Nf6 forces a pawn sacrifice which may or may not be your bag - if it is, go for it, but if you are even considering 3...Bc5 then it may be that 3...Be7 is a worthwhile alternative.
Ahh, the irony of that typo. The Petroff is dull as dishwater, symmetrical and usually played at sub-master level by draw merchants. I'd suggest even Philidor's 2...d6 ahead of it.
The Petroff is quiet interesting, you say? Let's just say it's the Petropianississimo Defense... The Petroff aims to not harm a flea.
Evans Gambit is only good OTB. On the computer here people have time to look up lines and it becomes a big problem not getting killed.
Do you like anchovies on your Caesar? If so, you might also like liver and onions, a dish that you must cultivate a taste for if you favor the Two Knights.

In support of this is that last year in an OTB game Caruana could only draw against the Evan's despite his opponent being rated over 300 points lower: http://www.chessgames.com/perl/chessgame?gid=1802641
