Most Instrutive Opening In Chess...

...for Beginners. 

When I say beginners, I don't mean for those brand new to chess.

I am watching a Fritz Trainer video by IM Lawrence Trent titled Two Knight's Defence. After viewing the first five clips, I got to thinking of setting up this position for my elementary students, having them play both sides of the board, not giving out any tips, and seeing what they discover. Cool

I too am getting in good tactical practice with this position in Live Chess, with a decent win/loss record.

What openings do you like to use for beginning instruction, if any at all?
