Does anyone have any openings for me to try out for them

Based on your rating, I would recommend the Scotch for white, and the French Defense and the Nimzo-Indian Defense for black.

(The opening technically starts with 1… Nf6 and THEN e6, but as shown, I recommend starting with 1… e6 so if they play e4, you’re back into the French, an opening you’d be familiar with, and you avoid any sideline crap like the Trompowsky. Transpositions are always useful and I’m surprised people don’t do this that often)

If it wasn’t obvious, the last one’s the Nimzo-Indian Defense

Scotch is good. French is fine but e5 is better and more principled. Against d4, simplest is to just play d5 and bring out your pieces. If white plays QG, Slav is my recommendation

You contradict yourself. First you say against 1.d4 that "Simplest" is 1...d5. Then, in the next breath, you recommend thr Slav, which is ultra-complicated. If you want simple, the Orthodox is the answer.

Just to prove the complications of the Slav, very few people understand how bad 1.d4 d5 2.c4 c6 3.Nf3 Nf6 4.Nc3 Bf5 really is for Black. To them, it looks normal. But for tactical reasons, Black needs to take on c4 first. After 4...Bf5? 5.cxd5 cxd5 6.Qb3, it is a clear advantage for White with massive pressure on d5 and b7.

It’s not complicated in the sense that you should just develop your pieces to natural squares. And you can just teach someone to take on c4 first then continue on with life.
