Nah, that's perfect, I hadn't considered that and it leads to positions of a different character.
So I'll probably choose 5.d4.
Yeah, GMs have played it, so it's fine... but I probably wont get the type of position I want every time.

Yeah, most of my prep (the little I've done so far) has assumed black doesn't allow the fun attacks, so as white I'm getting some play in the center / queenside.

I have chessbase files for openings, and I add games / positions. I added your game so I'll check it out later... re: move 3 I'll have to look into the proper move order, thanks for mentioning it.
Oh, and the engine doesn't like allowing the a5-b4-c5 structure on the q-side (I think more commonly black plays Nd4 at some point and not 18...c4) but it's basically still equal, and this way white gets to attack on the kingside, so it's a way to get a fun and dynamic game (I wonder how debilitating 13...h6 was).
But yeah, if I can get fun games like that out of the e6 sicilian I'd enjoy it. Not sure how practical it will be yet.

Yeah, Fischer's KIA games are basically must-know. In a few practice blitz games just to get a feel for it, I missed a similar piece-to-e4 sac... I calculated it but didn't think it worked. An important idea to be aware of.

Has people have noted the true KIA is with 3d3 instead of 3g3, so that after 3..d5 white can avoid queen exchange with 4Nb-d2. (Appparantly there is a weird thing in the caro kann that goes 1.e4 c6 2d3 d5 3Nf3 and white does care about the queen exchange, but it looks very meh, to me.)
3g3 is a thing in itself and in Kasparov's Test of time has a game against Spassky with it, typically goes into IQP positions.

I'm Canadian, not Ukrainian. I'm using the Ukrainian flag as a gesture of solidarity, until the Russians get tired of dying for Putin's ego and go home.
Wesley So recommends this KIA specifically against this move order in the Sicilian... Maybe check out his course.
I think it leads to very difficult positions for White.. But some really cool ideas. I think it's a cool challenge to play this way.
I play this exclusively vs 2.e6
If Black plays less restraint and principled there are many options to strike back... of course e6-e5 is rare.. but check it out with database... There are also options to return to a more normal position depending on what black does, d4, Rd1 instead of d3 can be strong.
You can also divert to a strange double fianchetto like how Eric Hansen beat Nepo in that Rapid tournament last year
