Solid opening for 1. E4 e5 as white? (With minimal theory, including sidelines)

I play the KIA vs the French, Sicilian and Caro, and as black I play the French & the Slav Accepted.

I'm looking for something that can hold up against 2100 players, but has minimal theory, including all relevant side lines. Preferably something with less than 200 moves of theory total, including all variations and side lines. Thanks.

Might want to look into the 4 Knights. Fairly straightforward. Surprising number of GM games over the last couple of years.

If want to look deeper, Carlsen had 3 or 4 as Black in that time frame as well I think.
