Against the Dutch defence, the Staunton Gambit 1.d4 f5 2.e4 would open things up a bit, and probably does well in blitz games.

I have seen the Polish a few times and after studing some ideas and seeing the recurring themes I believe I have a good feel for it.

Imo, the Staunton Gambit isn't that great against the Dutch. Agaisnt the Leningrad, I suggest you go for a super sharp- exchange sac line below. I believe Nakamura used it against someone whose name escapes me. Also, since you are a premium member, there is some video on this site which goes into more detail about this line below (Universal System against the Dutch I believe)
You should watch that video before playing this though. As for the stonewall, I am not really sure though- this exchange sac system works only against the Leningrad
(and only if your opponent gets into the Dutch with an immediate f5 after d4. For example, Nakamura recently played a game vs. Irina Krush in which he got into a Leningrad with a different move order. The same goes for the anti-dutch lines like the Staunton though. Easily avoided with using a different move-order)
I'm having some issues with the blitz games I'm playing in a chess club. As many blitzers know, one good way to get ahead in blitz is to play a gambit that gives you attacking chances, or playing something like Grob's or the Polish, things that most players don't see everyday and that are hard to combat on short clock. One of my friends LOVES the Danish Gambit. Granted, he can win with it accepted or declined, because he's studied it inside and out. I figured out a nice way to combat his tomfoolery, simply playing the Sicilian against him usually shuts down any theory he's got going on in his head. There are two things that are continuously killing me still though. Of the three guys I play often, one plays the 1...d6 against e4 and d4, but inevitably lets me steer it into KID waters (an opening I love to play as black and white), one plays the Dutch Defense (stonewall and leningrad types) against my 1.d4 that I always play, and one plays the Polish as white. If anyone knows any ways to quickly combat, or at least make the Dutch Defense incredibly sharp on both ends of the stick, that advice would help me tremendously. I've done my research on the opening but I'm usually a slower, grind you to a pulp guy, and general principles haven't worked against it. Also, I'm having trouble finding any sort of strategic theory against the Polish, at least regarding specific ~plans~ for black. Usually I just play for tactics and see who hangs something first, but that doesn't always end well. If anyone could offer any assistance on combating the Dutch and the Polish, it would be nice. Please keep in mind these are Game 10s, not longer games where I have enough time to think about positions too terribly deeply.
