My favorite underatted/offbeat opening is the Alekhine's Defense.

 

 

 

 

 

 

 

 

That is the main line, from which a variety of things can happen (the four pawns attack, the two pawns attack, the Modern Variation, etc.) the objective here is simple. White thinks he is creating a strong pawn center. Black is aiming to prove that white is merely providing a target.

The other line that you run into a lot is also fun to play...

 

 

 

 

 

 

 

This is the Scandinavian Variation of the Alekhine's Defense, and generally ends up producing wide open games, which I enjoy. Of course, if white chooses to advance the e-pawn on move 3, you can transpose into the French with 3.e6. It seems to kind of throw people off to fumble around in unknown territory for a few moves, then wind up in France.

This is rapidly becoming my favorite response to 1.e4.
