What opening should I play?

It really doesn't matter.
I'd play e4 e5 and the Italian if I just wanted to bring out my pieces, or a gambit (Evans, Danish, King's Gambit) if I wanted to have some fun and learn how to attack.

I am 2100 OTB, learn the Open Sicilian and Kings Indian Defense These are the 2 richest openings in chess theory

The person who asks for an opening is around 800 elo, I think neither KID or Sicilian are good options for this level.
I think Scandinavian is good to learn (even though I don't play it), Caro-Kann is also great but more positional, e5 against e4 is good, but you need to learn at least some plans against Spanish, Italian and Scotch, and lastly, French Defense is great for you if you feel comfortable in closed positions.
not the chicago gambit
why does it even exist: as white is screwed over
