Queens Gambit isn’t really a gambit of a pawn as white can win the pawn back easily and there’s no real “sacrifice”. The Benko gambit or Vienna gambit are fun to play.

This is all objective but I less mainstream gambit that is sound is the Stockfish gambit

King's Gambit, before it was ruined by farther analysis. Still one of the most fun openings to use against beginners.

I love the scotch gambit. Apart from the main line where black is solid, all the other variations lead to fireworks and are pretty uncomfortable for black

So this is a gambit that me and many others have played by misclick, but seriously works out. Its called the Reti Opening: Ross Gambit.



 
This looks like a blunder, doesn't it? Giving away a free pawn. Nope: it works out.
You can easily chase away the knight however you would like. When the opponent retreats the knight, you are given the chance to develop your queen (or other attacking pieces) and take charge of the game. Also, all of whites pawns are still in place if the gambit is accepted, which just helps your development headstart.

Only flaw: The Reti Opening is rare, so this gambit cannot be played much.
