You are asking the wrong question. What you should be asking is what openings fit your play style. For me, after playing many games and trying different openings, I found I like to fianchetto my bishop putting it on the long diagonal. So I looked at opening that have that as part of the opening. As white, I like to play the English opening; as black I like to play the Modern/Pirc Defense.

What does this even mean? What is "king's pawn"? If it's simply 1. e4, then why is the Italian named separately?

It's sort-of like asking "what is the best wrench?". It's the wrench which fits the bolt you're trying to wrench. 
Some openings are better than others, but at some point you narrow it down to a set of options (it's a large set in this case), they have different attributes, you should choose one based on your style, preferences, priorities, etc.

Whatever suits your style. My favourites are Caro Kann as black and Queens Gambit as white.

For a beginner, specific openings don’t matter. Learn basic opening principles. Then you should be able to reach a playable position no matter what the first few moves are.

King's pawn openings are more difficult.

I believe it would be easier for beginners to play a quiet setup with d4.

Learn openings, as a beginner, in the order they were played/popularized historically. As white, start with straight forward 1.e4 openings like the Center Game, Bishop's, Scotch, and Four Knights openings and the like. Later, as you progress in chess, shift to 1.e4 gambits like the King's Gambit. Do the same with black, answer 1. e4 with 1...e5. As you improve, shift to half-open games, then closed, and lastly modern openings. Somewhere along the line you'll find an opening that really appeals to you. Avoid all closed openings and modern openings for the time being. The older,e4 openings are straight forward and strongly reward principled play, thats where you should stay until about at least 1500 elo.

I say go with 1. e4 most of the time when you play white. It’s relatively flexible, easily transposed, and doesn’t require lots of chess knowledge to make it a great opening. So, definitely recommend for beginners. For more advanced players, the Scotch Gambit is great.

I just played my normal opening for white and after the analysis I got a sarcastic comment from the bot commentator; “learning new openings can keep chess fresh”. Love the sarcastic bot!
