What to do when not prepared?

Greetings, Chessters.

I'm fairly new to the game, and although I have a couple of openings which I am familar with, I have a big problem when playing black. I play the sicilian a lot, and am a big fan of the dutch defense, stonewall variation, but those two is, of course, not enough. This means that when I meet an opening move, i.e. e3, I dont have a clue of what to do. Some times I try just to play sicilian or stonewall against everything I encounter, but as I'm sure you can imagine, it's usually unsuccessful. My question is therefor: Is there a good opening for black which can be used against most openings that does not start out with e4 or d4?

And if you were to mention 3 openings from black which is a good idea to learn, which would it be?

Less focus on openings and more focus on principles is probably a good idea here.

The Colle-Zukertort can be played quite often. But it's very complex to master completely, I've not done it yet.

As Tricklev mentioned, you should generally just follow the principles.

Control the center, develop your pieces, etc.
