Which is a good defensive opening move which allows for a quick castling?

There's no way of White castling faster than Black if Black plays correctly...

I would say Antoshin's  Variation of the Philidor Defense. It is both solid and sound, but it's also very interesting and can even lead to a tactical game if you want it to.

So, that opening basically works in the favor of White?

What do you mean? I don't see where you get that idea?
Perhaps when I wrote about "equalizing" it gave the wrong impression. No, that is a solid variation for Black and perfectly playable. I recently bought The Philidor Files which is a book on that opening written by GM  Christian Bauer, and the analysis seems to indicate it is perfectly playable. I've had good experience with it as well. White often underestimates it.

The King's Indian Defense is now a popular hypermodern opening. It consists of the following moves

I'm not sure whether this opening can be used each time because Black may follow up with some other variation.

Also the Grünfeld Defense arises when Black moves 3...d5 instead of the usual 3...Bg7 and 4...d6
