What are some popular chess variants and the best time controls for them?

I want to take a break from regular chess so I thought I might want to play some variants as they have separate ratings. I would like to know what are some popular variants and the best time controls for them.

Gothic Chess has a fair number of 10+5, 10+0, and 5+0 games but you should practice up first. There are some tough players out there. It's also now known as Trice's Chess but the site has not changed its name, although everywhere else in the world changed it in 2019 because of Amazon resellers having older sets from the 1950s with the same name.

You can see Black set traps where he got attacked like crazy all to create a deadly pin in that j-file then other pins while even allowing his queen to be pinned. It was the perfect blend of strategy and tactics that would have made someone like Victor Korchnoi proud.
