King of the Hill because it is played closest to normal chess (at least if you play it well - the four center squares are magnets for suicidal kings but only relevant late in the game for people playing well. Easy win with solid Black play against a suicidal White king is 1 d3 d4 2 Kd2 e4 3 Ke3????? Qg5+ 4 Kf3 Qg4+ 5 Ke3 Qf4#.
After that, Horde is decent though I seem to get the White pieces a bit more than the Black pieces (seems like even chances for both sides with decent play and crushes for either side not playing well).

Metamachy is one of the best chess variants that I have ever played
(1) This chess variant can be enjoyed for over 100 moves before resigning or agreeing to a draw
(2) New tactical possibilities that does not exist in orthodox chess due to diversity of pieces and their non-overlapping movements (for example in Trice's chess and Grand chess the chancellor just overlaps the movements of knight and rook and the archbishop just overlaps the movements of knight and bishop)
(3) Due to plenty of (distinct) pieces on the board, each of them with different strength, even if a player is down in material, that player will have more opportunities to exploit opponent's mistakes and win back material than in orthodox chess (when there are too many pieces on the board)
(4) The choice of the pieces are perfect for this chess variant to be enjoyed and played on a 12×12 board, for all of them to co-ordinate together well to checkmate the opponent's king (unlike Gigachess played on a 14×14 board and Terachess played on a 16×16 board which have too many corporals, many pieces have overlapping movements and few powerful pieces are sufficient enough to checkmate the opponent's king)

Most of the time anyone ends up trying out unrated games with AI, although AI there is quite strong especially level 8 and there are 8 levels of AI difficulty to play with any chess variant over thereby (unlike www.jocly.com demonstration page at https://mi-g.github.io/jocly/examples/browser/control.html?game=metamachy-chess which has only weak AI of single difficulty level to try out with for all of two player strategy board games available over thereby).

It "was" Fog Of War till about 2 days ago, but this variant has been killed by the developer just recently with the addition of a 'fog' tile that is not optional making the game unplayable, sadly.

that is literally a thing people don't want in a chess variant. why play variants? a different feel from normal chess. this goes against that

Another commonly played variant is four-way chess and that is also close to normal chess. Horde might be the variant farthest from normal chess and that is number two on my list (though I play it more than the Hill because there are more potential opponents). Late in a good Hill game the moves can vary significantly from normal chess because of the Hill.
