Seirawan chess seems to me to be an interesting variant. It uses the rook-knight (elephant) and bishop-knight (hawk) compounds whilst maintaining the 8x8 board. You can even purchase these new pieces! They're dropped onto the board when back-rank pieces are moved. Because their starting positions aren't fixed, the number of opening possibilities are significantly multiplied.
