How do you unlock all the books? I have tried the openings and they don’t unlock

Keep trying. You need some help from your opponents (if they don't play in to your opening you can't get credit for it), but I found all but one to be not that difficult.
I had a hard time with the Bogo Indian, but I eventually got it. Nobody played along.
