Is it possible to calculate all possible moves?

I just watched a video saying "after the 3rd move, there are billions n billions of possibilities.. it is more than all the atoms in the universe" is this even true? I mean.. It took some of my sweet time but I realized that there are some rules in chess, limiting the maximum possible move count.. such as 50 move rule. "game draws if no capture or pawn moves in fifty moves" right?

So.. pawns can't go backwards, then it has to end somewhere.. you can not just move your knights back and forth because there is this three-fold repetition rule out there. same position shouldn't be formed 3 times in total, or it's draw.

these 2 rules will have to diminish all possible moves into.. a thousand maybe? why is it too hard to map all possible moves & games and store them into a database.. and foresee the result of each one.. and proceed with one with the highest winning percentage?

1) how many possible moves are there for real? (longest possible game)

2) why can't we map and make statistics of each way, to see what to do.
