I don't have an answer but I'm wondering also, if that person's rating continues to change, as it likely will, will that win keep reflecting that person's rating in your stats? If they were to drop to 1800 and you have another win over a person rated 1810, would that other win now be your best win?

No, that win would stay as your best win. It doesn't matter if that player's rating drops to zero. But that goes back to my point: if their rating is 2000 in the moment you are playing them, and you win, why don't your stats say that your best win (if it was your best win) state that your opponent was rated 2000? Crazy.
Can someone please explain the logic here: I (hypothetically) play someone rated 2000 in bullet and I win even though my rating is only 1650. It's my best win in terms of opponent strength. I then go to my stats, and my win against highest-rated opponent is recorded as something like 1985 - ie. that same player but with their rating AFTER they played me. Why? When I played them, they had a rating of 2000. ie. I beat someone rated 2000. Why would my stats not reflect that? Seems totally nuts to me.
