Why am I having crazy game endings?

I’m getting upended in ways I don’t understand. Yesterday a guy wanted a draw with his king alone left on the board and I was converging two bishops, three pawns, a knight, and a queen on him. I couldn’t see how to refuse the draw. Just now again I’m in control with strong pieces ready to close and the game ends because I supposedly resign. which I did not! What the …?
Its called stalemate. Or being greedy, Just checkmate your opponent.
