Why moving the pawn to d5 was so hard for me to figure out I'll never understand.

Yes, development is important, but you should always stop and think if you have some possibilities to win some material. Sometimes winning material is more important that castling and sometimes it is not. In most cases, castling is more important than winning a pawn, because winning that pawn maybe can stop you from castling in the future and because of it, you can lose a game. In this case, your king is safe and you can win a knight, so there is nothing to worry about.
