what's the best way to slow the game down so that you are not making sudden moves

When you click on live, you can click on options for the games and set it to a rating range + or - some amount, and it will match you up with opponents who are closer rated.  I see your last game you were giving up 900 points of rating.  That's not going to be very instructive... Set it to + or - 100 and see if that doesn't yield some more competitive games.  

Playing when you're badly lost is just too hard, much less when you're starting out.  I only looked at that one game, but your time was good, you used all of it.  There's no sense playing if you leave a bunch of time on the clock.  But with such a stronger player, the results are going to be just what you saw.  That said, it also looks like you're keeping the game going 20-40 moves and that's great.  Even with much higher rated opponents.  Again, that's a good sign.  

When you click on "Play", on the right there will be a drop down for the game that says "Custom".   Click that, then down a few lines it will ask for a rating range.  Set that to whatever you want.
