For a first chess course providing basic coverage of all aspects of chess - "Pandolfini's Ultimate Guide to Chess" by Bruce Pandolfini, or "The Complete Idiot's Guide to Chess" By Patrick Wolff.

I would be remiss if I did not also suggest this classic....

The Game of Chess by Siegbert Tarrasch

The book is one of the most comprehensive single-volume treatises of chess ever written.

The Lou Hays (editor) edition is essentially an unabridged version of the 1935 edition, except that the notation has been updated to modern Algebraic notation.   The only caveat is that the material on openings has been retained from the original.  This means that, while the material on the 1.e4 open games is still useful for the most part, the "theory" of the 1.d4, 1Nf3 and 1.c4 openings has evolved a great deal since the book was originally published, so keep that in mind if you intend to study the material on those openings.   However, for the rest of the book, chess is chess, so the material is relevant, in addition to being instructively presented.
