I’m pretty new to the game and have much to learn. My biggest problem I’ve noticed is I could have plenty more pieces than my opponent yet I can never finish a game quickly. I always end up with a draw. How can I keep this from happening?

I saw one of the games you've drawn in a winning position, and it was a draw due to stalemate.
First you need to understand what is stalemate.
Stalemate is when the opponent doesn't have any legal moves and his king is not in check.
As a contrast checkmate is when the opponent doesn't have any legal moves and his king is in check.
So you need to be aware if the opponent has a move when he has only his king left or only a king and some blocked pawns. So either avoid taking everything from him without a checkmate or at least keep giving checks until a checkmate to not allow stalemate.
