easy openings to learn

Any opening is easy, as long as you don't try to "learn" (memorize) too deep. I am not convinced that you are any better off learning deep with the Italian or Scotch, than you are with starting with the Ruy Lopez to 3.Bg5, or the Open Sicilian to 4.Nxd4 then playing your own game. If you are playing against people of similar ability, they are more or less in the same boat you are. As you climb the ranks, you will take your losses sure, but you will pick up the moves as you go along. Probably in the long run you will be better off.
For example, I have read that Kasparov himself was critical of his early handlers, headed by Botvinnik, who had him play a ... less complex opening, the Caro-Kann. Syaing they should have started him on the Sicilian right away.

I think the Caro-Kann is one of the easier ones. You just have to be careful of the infamous opening trap that White can perform on an unknowing player. Furthermore, the Alien Gambit, while quite scary at first glance, is typically very bad if black knows what to do.
Opinions may vary on what is "easy" but this is mine.

The one that fits your playstyle, really.

The Alien Gambit is actually super easy. All you have to remember is three moves, and two of them are really quite intuitive.
After that the Alien Gambit is completely harmless.
