You actually don't have to castle. If you ask me, castling is overrated these days (it might not be safe to say that).

To cite GM Naroditsky: "It depends" (often his answer to chess questions like that)

You can castle to the wrong side, into the danger.

You may have a fortress in the middle of the board, and not castling may be superior.

You may have entered the endgame quickly, thus will need the king in future operations.

In general however castling is a good thing to do. You connect the rooks, you move the king outside the competed center.
