Everyone seems to play the Italian game, but as a beginner you never know what your opponent will play.  You have no clue and your opponent's have no clue.

The Van Geet is the knight opening.

And for black: Black Knight's Tango.
The White Knight's Fandango is the equivalent for white. It's also known as Reversed Mexican Defense. It's pretty cool once you get experienced.

There are no knight openings. You can play knights early, but you must play at least 2 pawns to open diagonals for your bishops and those also secure squares for your knights.
For beginners it is recommended to play in reverse order of value:
pawn - knight - bishop - castle - queen

For white, u can try out the KIA (King's Indian Attack). It helped me climbed that rating ladder. For black, maybe u can do a KID, but only when ur opponent plays 1. D4. With 1. E4, there is the Nimzovitch, but i dont rlly play it at all. U can check these knight openings out.
