Try setting playing range to +\-100 when you create the challenge:

I am having a really hard time improving. I am just learning and I have a 350 rating. I keep getting matched with players that have 500-800 ratings from a few days ago, but are rated like me today. Its impossible to learn anything when you just keep getting crushed by experienced players that are messing about.
