Simplest and best for beginners and World Champions alike is to defend 1 e4 e5 and 1 d4 d5 as black and to open 1 e4 as white.

you dont want to go deep into opening theory so you want some universal openings.

For white: Just do the London system till you get to about 900 to 1000.

For black: go for the Kings Indian Defense/Indian game. pretty much universally the same setup to any white move. Makes for a rather wild middle-game but it keeps you from falling into any quick checkmates like scholars mate or fools mate. Just play solid and conservative in the middle game and you should be fine. The caveat is if they play 1e4 you need to go 1...,d6 before Ng6 which is the Pirc defense after that setup is roughly the same.

when you get used to that, think about trying the Caro Kann as a reply to 1e4

IMHO, you should try different openings, limiting yourself to the more classic and "normal" ones, and then choose, in a while, the one that suits you best. That's what I did. As black I always played 1..., e5 against 1.e4, and I've always had the feeling of being uncomfortable, compressed, crushed. At some point I decided to try to change, and thanks to some suggestions I had right here I chose French Defense, with which I feel great.

Be careful, I am not saying that French is better than others nor am I suggesting you to adopt it. I'm just saying that it's good to choose an opening that you have a feeling with. The opening does not affect the game ( at our stage ) in the sense that it is the mistakes we make afterwards that determine the outcome; but entering a type of middlegame that makes us feel comfortable is important, even on a psychological level. And that can make quite a difference.

So, to sum up : IMHO, the best is the one that suits you best. It will take you some time to find it.

e4 e5 and d4 d5 are good for both colours, but I wouldn't recommend you spend any significant time studying the opening until you're at least 1000

if you get trapped out of the opening just review the game, look for an alternative move or earlier move that got you in trouble and take it as a learning experience

play 10+0 and slower, and review your games looking for missed tactics and mistakes

for the time being no further learning strategy is needed
