If you liked bullet then simply play it. 800 is ok and without learning in slower time controls it will not change a lot.
Why not play 3+2 blitz? It is still fast enough for quick games but slow enough to think. I can't answer your question about bullet though. To fast for me.

The truth to getting a better at bullet, is just to get better at chess. You need to play more rapid and improve your chess skill. Bullet only SHOWCASES your knowledge. You cannot improve your chess skill in just playing bullet alone. If you want a 1000-1200 bullet, you need a ~1400 -1500 rapid.

i know bullet is bad but i kind of stopped playing rapid often because i went on a losing spree from tilt so now i am obsessing with 2+1 cuz i can't play 1 min but anyway how can i get to a bullet rating of like 1000-1200 ish range for reference i suck at speed chess im 800 and rapid rating is 1200 ish
