What’s the best way to visualize diagonals when not looking at a board? I can visualize files, knight moves, and pieces just fine but struggle with the diagonals

Huh? You can visualize knight moves but not diagonals?

Diagonals go diagonal.
Knight moves go in forks against your queen or rooks.

Thats so interesting as I have so much trouble visualizing the knights. They drive me crazy!

It comes with time. A good trick to speed it up might be to practice calling out a square and saying whether it's a light or a dark square. That might make it easier to visualize the diagonal too.

try to do puzzles or patterns which help with learning how to utilize diagonals better ❤️

Why not? Put your bishop diagonally in the opening stages to see if you spot a tactic or win some material?
