Why is my white bishop check the best move in that spot?
Can't the black king simply get it instead of moving to 8?

This is a somewhat difficult (but fun!) tactic to spot.
Here is the position and continuation if the king takes the bishop.
If Black takes the bishop, then you actually win material as the Black knight will be pinned to the king.
