Read this article which explains the players mindset, why they abort the game, and What to Do if the Opponent Doesn’t Make a Move in the Middle of the Game.

Why do people abort the game even before it's started?

There are some people who abort the game as it starts. I don't quite get those people.. If they don't want to play then why start the game? Or is there any reason for that?

Maybe they are scared playing with some high elo people? Like come on man, it's fun.

once I challenged a bunch of masters for fun, no one accepted. lol

Could be that they had something unexpected that they had to do. Could be that they see your rating and get scared of losing more rating than they could possibly gain. I play anyone I'm matched with and I quite frequently get games where if i lose i will lose 10 elo but a win is only worth 5. Its annoying to lose those games but as I see it the blame is on me if I lose to a player rated that far below me.

maybe they rage-clicked and realized that they had no time to play the game. I've done that once

True. The rating part

I abort rapid games if the opponent is a new account or if they have suspicious ratings. If you got a rapid rating similar to mine but you're blitz/bullet is in the triple digits, I ain't playing you 😂

Players might abort if the opponent’s rating is too high or too low, as they may feel the match won’t be competitive or enjoyable.

Easy sulution. Just change the rating range to about -50 and +50. Then, for example if you're 600, you will play in between 550 and 650, except for arena

I do this sometimes, every time it's because something happened or I legitimately didn't mean to click it. Sometimes I want to play a rematch with a friend of mine, but I accidently click 'New 5 minutes'.

Usually if I do it it's because I didn't want to play the game anyway, and accidentally clicked on new game. The other common reason is that I wanted to play and precisely at the moment I started, a family member turned up in need of instant attention. (if they do that later in the game, I resign; I used to send a quick apology, but very few players accept comments nowadays)
