To clarify further, I didn't agree to a draw or anything. I am genuinely befuddled by this and would really appreciate help understanding it!

The game is stalemated. The white king is safe, but can't legally move because kings are not allowed to move into check. Since whites pawn can not move, there are no legal moves for white, causing a draw.
I recently completed this game and it was a draw, why? I still had 6 mins on the clock as opposed to my opponents ~2.5 mins. I had far more pieces and plenty of options to continue the game. Why was this game suddenly marked as a draw?
This is a stalemate. The enemy king has nowhere to go, and the only remaining pawn is blocked with no capturing options. The opponent has no moves, but is not in check, so it is a stalemate.
The pawn is blocked, and any of the king moves put himself in check, thus making it illegal. Such position is called 'Stalemate'- it's white/black's turn and white/black doesn't have a move to play. This ends in a draw.
Your lucky that it was a draw. If you're opponent was a little higher rated and had more experience, they would have saw the Checkmate. Not a bad game for two U600 players.
I have been well ahead n severa games, my opponent doesnt move anymore, i cant move because its their turn and lose or there is a draw because the time runs out...??

Of course you wouldn't agree to a draw! So, if you did not offer a draw, and the system still somehow registered a draw, that means...
That said, I wasn't expecting a stalemate to come in such a position. It was just unfortunate that the b6 pawn prevented the White king from accessing the c5 square safely.
Just take a look at position on move 27, after 27. Kxf2. How should black win this game? Any sensible person would answer "promote the g6 pawn to a queen and checkmate the white king".
Now look at what black did instead. All those 8 moves were completely pointless random moves that did nothing to win the game or even to improve the position.
