In my opinion, the bishops should have a simple win... with such a wide open board.

If knights want to have a chance, it's best (in my opinion and judgement) to trade down. Likewise, the bishops should avoid trades to maintain superiority in space control.

It doesn't really matter whether there are 7 pieces or 2 pieces. Bishops are better in an open position like the starting position.

How about giving this starting position to the top 3 to 5 chess programs in the world at classic (slow) time controls for about a 100 games each and see the score? Not blitz. Sounds like an interesting idea.
