Well one exercise drill that I practiced with a student was to use only a Knight and Queen and have each player take turns until the Queen can capture the knight.
Though the exercise is easy once you understand the idea, it was almost inevitable that the student (at the very beginning) would not bother to think more than one move ahead and kept moving the queen around aimlessly while the Knight would keep dodging her.
The whole "queen moves aggressively, knight moves and escapes" exercise might be the dance you were looking for...though less of a waltz and maybe an argentine tango :)

I know this may sound strange but i want to make a short movie with some chess pieces. Do you have a idea about how a knight and a queen should move across the table so that it would look like they were waltzing, since the walts base step is L-shaped? there are no other pieces on the board, just a the dancing kight and the queen.
