I'm going to take a wild guess that this position is illegal:

I doubt enough pieces could be captured to let pawns promote on the correct color squares for 9 bishops of each side to be opposite colored. So this is my position, perfect for the Christmas Season as well.

It's illegal. After Black has made enough captures (at least six) to let the players have eight bishops on opposite colors, all the remaining black units will still be on the board at the end. That leaves Black with no unit to be uncaptured at c5 to legally uncheck the black king at the end.

On the topic of illegal moves, here's an interesting thing to think about. Let us assume black walked into check, and that white's next move is not a check but keeps black's king in check. What would the notation for that move be?

That's the wrong question. This is not one illegal move but two in a row. Solving the issues for one illegal move is already complicated, for more it is practicly undoable.

Now it's illegal since Black is one tempo short at the end. Can the position be reached legally if one side is allowed to make one illegal move? Yes, if after 1. h4 Nc6 2. Rh3 Black is allowed to make the illegal move Pb7-b8, as show below. But is that move a proper illegal move? Who knows? Maybe Arisktotle.
