5.dxe4 was the best move in that position.

I have no idea why your opponent resigned.

and if 6. Nxe4 then 6...Bb4+ ?

That is correct.  This move forces white to move his king, or undevelop a piece.

Was this a live chess game or correspondence game? I for the life of me can't figure out why white would resign.

 Better is 6...Be7. You have to keep pressure on d5 (by Knight and pawn) and at the same time release the pin.
