Because Bxg4 (bishop captures bishop) is the starting move of the sequence of of winning a knight. If black does not play Nxg4 then of course you do not win the knight. However you then won the bishop which you have already captured.

Unless, of course, your opponent takes your bishop. Then the best move would be to take his knight - that's what the engine is talking about!

If that's what you thought, why ask? The move wins a bishop because after you take the bishop, even though their knight takes, you take their knight, winning a piece.
