The three moves that are used to try make a mate in 1 difficult, are castle, sub promotion Knight, and en passant.

But maybe I forget something.

Oh yeah, before the FIDE rules got amended, specifying you must promote into a piece of your own colour, you could get problems where the solution was to discovery check+promote into a (King blocking) piece of your opponent's colour.
