I find it highly unlikely you will beat a player with that rating in that position in a correspondence game and believe your temporary pressure will be beaten back over the next few moves. If you believe you'll learn something from that, there is certainly no reason to resign, but the game is pretty hopeless.
Typically, a player of his rating will have put in several hundred or thousand hours on chess over several years. You are playing very well for where your at, but your playing a much bigger fish.
