Why are people not taking with the queen and exposing their long side castle?

Ignore whatever the lousy analysis is telling you, qxf3 is fine, and in fact stockfish thinks its the best move. Castling queenside is not usually the best plan in these kinds of positions though. It tends to be a bit airy with the cpawn advanced like that, and also makes it harder to use the eventually half open cfile to pressure black's queenside. Qxf3 is more about keeping your pawn structure intact and allowing you to safely castle kingside.
