The site does have 16.1
It's pretty hard to quantify a move as interesting algorithmically using engine evaluations, so that's unlikely something that would ever be added. Interesting isn't even a classification that many people would agree on as a definition.
But national federations still use !?. And I guess Stockfish 16.1 is only in the app not the web version.

That screenshot is the web version. Not sure what you mean by national federations using it.
